Events!

Hello blog world! Today I am going to be helping out at an event that the place I am interning with is hosting. (Thats one jam packed sentence) It is... a fashion show! So fitting for me :) Anyways I am really excited to be a part of all this.

The place I am interning with is called Distinguished Young Women (formerly Americas Junior Miss) and the even is called 7th on the Hill and then tonight we have another show called Rock the Runway.

Anyways I will obviously be quite busy today and away from blogging so I hope everyone has a great day!!!

Sixteen Cities - Captured By Your Love

Another Monday... :) I have a lot of in front of me this week but am having one of those determined days that helps me feel like I am gonna be able to just tear right through it! Not only that but do it with greatness. God is so faithful in his provisions he gives to his faithful servants!!

As for Music Monday, I just discovered this AMAZING band, Sixteen Cities, last week. Has anyone heard of them before?! Their songs have such great lyrics and so much passion, my fav! My pick is "Captured By Your Love". This is one of those songs that you can really scream your heart out to.. watch out :)



Other goodies from this band are "Pray You Through" and "Finally Ready" and really... all of them :)

Another announcement (one that I am pretty excited about) is that I finally added a Music Monday tab!! Located under my header, there is a link to all of the Music Monday posts of the past with the artist and their song! So now it will be easy to look up any music that you may have missed. This is the first of many updates that I have planned for the near future.

Small Celebration

Yay for the Weekend!

I dont know about you guys but I am sooooo happy its Friday! This week wore me out and I am excited to finally have time for fun things and sleep! Also on Sunday, if the weather decides to join in on the fun, I might finally be going to the beach!!! WOO HOOO!!!

Something Yummy

A while ago I had my first fish taco at one of the hubs and I's new favorite restaurants, Felix's and it rocked my world. You see I have never been a lover of fish and seafood. You could have even called me a hater for most of my life. But because the hubs loves fish and such so much I have been trying to broaden my horizons. To my surprise I actually like some kinds of fish! Especially Felix's fish :) Anyways, these fish tacos were amazingly delicious and ever since they touched my mouth I wanted to make my own version at home!

Well the other day when the hubs and I were wandering through the grocery store I found tilapia on sale. Perfect chance! So I snatched some and began my search for inspiration. I combined a few different recipes that I found online and here is what I came up with:

Fish and Cabbage Tacos
1 lb Tilapia
1/4 c. vegetable oil
1 lime juiced
1 tablespoon chili powder
1 small jalapeno chopped
Shredded red cabbage
Shredded cheddar cheese


Salsa:
2-3 med. tomatoes chopped
1 can corn
1 can black beans, rinsed
1 1/2 teaspoon jalapeno chopped
1 small onion chopped
1/2 c. cilantro chopped
1 teaspoon chili powder
salt and pepper to taste


Combine all ingredients but tilapia to create marinade. Put fish fillets in a pan and pour marinade over. Let sit for 30 minutes. Cook fillets in skillet on high heat until cooked thoroughly and browned on outside. Pull apart into flakey pieces and set aside.


Mix all salsa ingredients together. Set aside. Warm up tortillas or hard shell tacos. Serve with tilapia, salsa, cabbage, and cheese.

I always forget to take pictures when I am cooking cause I get "in the moment" and quite frankly I am usually in a time crunch :/. But I snagged a quick shot with the hubby's cell phone. 

They were so yummy and healthy!
We used lettuce instead of cabbage because I had to use it up!



We had left over salsa afterwards so I used it to make a Chipotle BBQ Chicken Salad. It was Mmmm Mmmm good. All you have to do is:
Toss some sliced chicken pieces in olive oil and chipotle seasoning (I use Pampered Chef Chipotle Rub - its to die for!). Cook the chicken. Once cooked toss in Honey BBQ sauce. Then put chicken over a bed of greens with a a generous amount of salsa and there ya go! I added some extra BBQ sauce and Ranch to my salad to top it off.

Seriously... either of these will not leave you disappointed :)

Music Music Music :)

Happy Monday everyone!!! It has been in the 80s for the past week here in 'Bama and this Minnesota girl is not used to this kind of weather in March! But as a a lover of sunshine, I can't complain and I am really looking forward to finding some beach time in the near future!

This week I am featuring the band Me in Motion. You have most likely heard their songs "Eye of the Hurricane" or "Losers" around town.
Their song "The God I Know" really fits where I am at right now and the message we received at church yesterday. My favorite chunk of the song is:

Free Love!!


Is it Monday already??? Last week flew by! As I said in previous posts, last week was my Spring Break. Needless to say I feel much more refreshed this Monday and I have more drive to kick the rest of this semester in the butt! Our spring break was filled with many activities, friends, errands, yummy dinners, and dreaming (one of our favs ...or mine that is forced upon my husband?... :) ).

This week's feature is "This Love is Free" by Hyland. I heard them on the radio the other day and LOVE their sound. I found out later that this band has been in the Battle of the Band Finals at Club 3 Degrees in 2009. Club 3 Degrees is in Minneapolis! My home town :) My friend Ria actually got married there in 2009 too!! Crazy. Just thought that was a fun fact that reminds me of home.

Confession :)

Ok. I have to confess that I totally forgot about the blog world yesterday and posting for Music Monday!! It was our first day of spring break and throughout the hustle and bustle it totally left my mind to post!

The Hubs and I ran a ton of errands and catching up on stuff.  Then we spent the rest of the evening with friends. We went to a Mardi Gras parade then had some yummy vegetable soup after! It was actually really fun! They threw out beads, cups, stuffed animals, candy, and more! The floats were awesome. I kept trying to figure out how the heck people made such amazing masterpieces.

Music Monday is a little different this week. I have an announcement instead of a feature. Anyone remember one of the first posts I had about the band from my church, Solomon's Road? It was about their single "Not Kept Silent". Well I am happy to announce... that their CD is being released this coming week! I have previewed a couple of the songs on the CD and it is amazing. They are so talented and I cant wait to be rocking out in my car to them!!!

This week Brittany at Mrs. Yellow Ribbon is hosting a Show Me Your Rings link party!! I thought it was a super sweet idea so I decided to join :) So here is mine!

Did you look at rings together?
Not right away, because I love surprises. So he found one on his own at first, which I later found out about. Then we decided that I am so specific that it would probably be best if I go look at them. They are definitely an investment. Oofta!

Do you like your ring? Did you from the beginning?...and be honest!
Yes! I LOVED how my engagement ring sparkled. :) The band I actually designed myself and had made custom, so needless to day yes I also loved that very much.

How often do you wear your rings?
I hate taking off my rings. I only do if I absolutely have to.

Do you clean your rings?
My smart hubby bought insurance for my ring so I have to bring my ring in for a check up every 6 months and they also clean it and polish it. Its the best!

What went through your mind the very first time you saw your ring?
When I got my engagement ring I was disbelief at the fact that I was FINALLY getting married to the man of my dreams. When I saw my band for the first time I thought, "Can we just get married now because I don't wanna take this off.."

Spring Break

I am happy to announce... that my Spring Break is finally here! Woohooo!!!! It couldn't have come at a better time. The hubs and I are totally burnt out on studying and welcome this break with open arms :) We have a couple things planned that I am looking forward to. Sunday there is a baby shower for a friend from church. Mon or Tues we may attend a Mardi Gras parade just to see what all the buzz is about. I guess people make some pretty impressive floats.
Orange Beach is one of our cities on the coast and where our friend's condo is!
 If you didnt know Mobile is actually where Mardi Gras originated. So it is a pretty big deal around here. It has been going on for three weeks now! Crazy right?? Other then that we are planning on just working and relaxing and catching up on things that have been left behind!

I love breaks, they allow me to get everything back an order. A refreshment for my life :)
