Nutty Mini Football Treats |
Peanut Butter Balls |
Ingredients
1 c. + 2 Tbls. crunchy peanut butter
1/ c. smooth peanut butter
1c. powdered sugar
1/4 c. + 3 Tbls butter (softened)
1 bag semi sweet chocolate chips
6 c. rice krispies
1 package reg. marshmallows
1 can cream cheese frosting
Step 1: In bowl, beat together 1 c. crunchy pb, 1/4 c. butter and powdered sugar until combined. Put in refrigerator to chill for 15 min.
Step 2: In large saucepan melt 3Tbls. butter over low heat. Add marshmallows and stir until completely melted Remove from heat and stir in 1 c. smooth pb until melted.
Step 3: Add rice krispies and stir until well melted. Let cool.
Step 4: Take peanut butter mixture and form into 1 inch balls or smaller.
Here come the tricky part...
Step 5: Form rice krispie mixture around peanut butter ball and point ends to look like a football. (I took a handful of rice krispies and made a crater in the middle where I placed the peanut butter ball. Then formed the access around it.
Step 6: Melt chocolate chips and 2 Tbls. peanut butter in small saucepan over low heat.
Step7. Dip footballs into melted chocolate. Cover all surfaces. Refrigerate
Step 8: Put frosting into small plastic baggie and seal. Cut off a small corner and frost footballs.
SERVE AND ENJOY!!
I got a million compliments on these. An option for valentines day is to just make balls and put some red or pink sprinkles on top. Or you could put them in V-day muffin tins :)
Oh and by the way... ITS FINALLY FRIDAY!! It couldn't have come any sooner! What a fun weekend me and the hubs have planned ahead. Usually I work on Saturday morning but I took it off tom (YAYYY) so we could have a date day/V-day celebration :) I am so excited! WE will just be doing fun things together during the day and then at night we are going to the Winter Jam concert! There are 12 bands playing! Holy moly! The ones I am most excited for are Red, Francesca Battistelli, David Crowder Band and the.....
